Chicken Adobo side with Garlic Fried Cauliflower Rice



Yield: Individual Serving

Ingredients:
For Garlic Cauliflower Fried Rice
2 cups broccoli florets, grated using a food processor
1 clove garlic, finely minced
olive oil

For IP Chicken Adobo
8 ounces boneless skinless chicken breast
1/4 cup low sodium soy sauce
1/8 cup vinegar
1 bay leaf
1 or two dashes of ground black pepper

Procedure:
1. Heat a skillet and saute' garlic until slightly brown. Add the grated cauliflower and continue stirring until the cauliflower is half-cooked or softer. Season it with a dash of salt and pepper. Plate and set aside.
2. In a sauce pan, combine the chicken, soy sauce, vinegar and bay leaf and ground black pepper. Cover and cook it in a low medium heat until the meat is soft and well done. Plate it together with the fried Cauliflower rice.
3. Serve and enjoy!
