Cauliflower Chicken Nuggets

Yield: Individual serving

Ingredients:
2 cups cauliflower
8 ounces boneless, skinless chicken breast
1/4 tsp. Grill Mate Montreal Chicken seasoning
2-3 dashes of salt and pepper
1 packet Ideal Protein Croustilles BBQ crisps, grated to the consistency of bread crumbs in a food processor
1 piece egg or 3 tbsp egg white substitute
olive oil spray

Procedure:
1. Using a food processor (I used Ninja), grate the chicken and cauliflower. Season it with Montreal chicken seasoning, salt and pepper then add the egg white substitute. Mix again until all the ingredients are well incorporated.
2. Preheat the oven to 370 degree Fahrenheit. Spray a cookie sheet with olive oil.
3. Get a spoonful mixture of chicken and cauliflower and form it like chicken nuggets. Cover it with the grated BBQ crisps and place it in the sprayed cookie sheet. Repeat the same procedure until all the mixture is formed into nuggets.
4. Bake it for 25-30 minutes or until the the chicken is well done.
5. Plate, serve and enjoy!

I used the left over grated crisp for my hubby's dinner from the previous night that's why it wasn't enough to cover the nuggets I made. I tried the nuggets without the crisps and it was still good.
