Maja blanca or coconut pudding is one of the known Filipino dessert which I believe to be of Spanish influence. As the name suggest it is originally made with coconut milk and condensed milk but eventually people started adding sweet corn kernel and crushed peanuts or toasted grated coconut
Ingredients:
2 cans (13.5 fl. oz.) coconut milk
1 cup granulated sugar
14 oz. condensed milk
2 cans (15 oz.) whole kernel sweet corn, drained
1 cup fresh milk
3/4 cup corn starch
4 tbsp peanuts or toasted grated coconut
Procedure:
1. Pour the coconut milk in a deep cooking pot. Add the granulated sugar and condensed milk. Stir and bring to a boil. Add the sweet corn kernel then simmer.
2. In a bowl, pour the fresh milk and dissolve the cornstarch. Pour it in the coconut milk mixture. Stir continually until the sauce thickens.
3. Pour the thick mixture in a pan, you can sprinkle it on top with crushed peanuts or toasted grated coconut, let cool and refrigerate for about an hour.
4. Serve and Enjoy!
