Pan-seared Chicken Breast topped with Sauteed Spinach



Individual servings for Ideal Protein Diet

Ingredients:
Approx. 1/2 lb. or 1 chicken breast half, cut into two
1/8 tsp. salt
1/8 tsp. dried thyme
1/8 tsp. ground black pepper
1 tsp. Olive oil

2 cups spinach
1 tsp. Olive oil
1 clove garlic, finely minced
1 stalk green onion, sliced
1/8 tsp. salt

Procedure:
1. Season the chicken with salt, pepper, thyme and Olive oil. Marinate for about 30 minutes or so.
2. Meanwhile, heat a skillet and pour Olive oil. Saute' the garlic and green onion then add the spinach. Continue stirring until the spinach leaves are all wilted. Set aside.
3. Heat another skillet and pour some Olive oil. Pan-sear both sides of the chicken with the lid on and heat on medium. Add the liquid formed from when you sauteed the spinach by draining it or just add about 1/8 cup water to help cook the chicken.
4. Transfer the chicken to a serving platter then top it with the sauteed spinach. Serve and enjoy!
