Baked Chicken Breast in Buffalo Wing Sauce side with Sauteed Bokchoy



Individual servings for Ideal Protein diet

Ingredients:
1/2 lb. boneless, skinless chicken breast, cut into cubes
1/8 tsp. ground black pepper
1/8 tsp. salt
1 tbsp. Sweet Baby Rays Buffalo Chicken Wings Sauce (Plus more for additional sauce in the plate)

2 cups baby bokchoy, washed and sliced
1 tsp. Olive oil
1 clove garlic, minced
2-3 tsp low sodium soy sauce
1 pinch of ground black pepper

Procedure:
1. Marinade chicken to a mixture of salt, ground black pepper and the buffalo sauce for about 30 minutes or while cutting up vegetables.
2. Preheat oven to 375 degrees Fahrenheit. Transfer the marinated chicken to a baking dish or pan and bake it for 30-35 minutes or until the center of the chicken is no longer pinkish.
3. Heat the Olive oil in a skillet. Saute' the garlic until golden brown. Add in the bokchoy ribs and pour the soy sauce. Stir. Add in the bokchoy leaves. Stir until the leaves are all wilted. (If it's too dry you can add a tsp. of water.) Season it with ground black pepper.
4. Transfer the baked chicken and cooked bokchoy in a serving platter. Serve and enjoy!
