The first time I ever tried Quiche is at the women's breakfast at Hope Bible Church. Since then, I've been wanting to make some for me and my hubby. So happy it was a success.
Recipe yield: Servings for Four
Ingredients:
4 eggs, slightly beaten
1 1/2 half and half milk (I used 1 % fat milk)
1/2 cup chicken, thinly sliced small
2 slices of smoked bacon, sliced
1 cup grated Swiss cheese (I used mild cheddar cheese)
3 cups frozen broccoli and/or spinach, thawed and drained, broccoli cut into smaller pieces.
Procedure:
1. Preheat oven to 400 degrees Fahrenheit. Heat a skillet and pan-fry the bacon in its own fat until it is crispy. Discard the fat. Add in the small slices of chicken and cook until the color turns white.
2. Using an 11"x5" baking dish, layer the vegetables and add the cooked chicken. Sprinkle the cheese on top of it.
3. In a bowl, whisk the eggs and milk. Pour it over to the baking dish where the vegetables, chicken and bacon.
4. Put the mixture in the oven and bake it for 25 mins. or when the top starts to brown and be firm.
