Chicken Stewed in Coconut Milk or Ginataang Manok for Filipinos


Recipe yield: Servings for Two

Ingredients:
1 lb. chicken, cut into serving pieces (I used boneless skinless chicken breast, sliced)
1 Tbsp. olive oil
1 finger sized ginger, sliced
1 clove garlic, minced
1/4 of a med. sized onion, sliced
4 oz. papaya, sliced
1 cup coconut milk
1 pcs. Whole Green pepper
5 oz. spinach leaves, washed and drained
Salt and pepper to taste

Procedure:
1. Season sliced chicken with salt and pepper. Heat a skillet and pour olive oil. Sauté the ginger then add seasoned chicken. Stir until the color of chicken turned to white. Add in sauté the garlic and onion.
2. Add in the sliced papaya. Stir. Pour the coconut milk, stir then add in the whole green pepper. Simmer for about 2 mins until it starts boiling. Add in the spinach and cover until the leaves becomes wilted. Stir and give it a final taste.
3. Place it in a serving platter. Serve and enjoy!
