Adobo is a Filipino dish that is probably hard to forget. Because one, it's really easy and there only few ingredients and two, it's really delicious. Even our friend, Karsten and Donald, when they tried it, never forgot it. My mom and even I, when I was younger, would make Adobo and it was like feast for everyone. It's just a perfect pair for rice.
We still have some left over mushroom in the fridge so I added it to this dish and it turned out great. I also made it a little spicy that is why I call it Adobo with a Twist.
Recipe Yields: Servings for 1 to 2 persons
Ingredients:
1/2 (approx.) boneless, skinless chicken breast, cut into bite sizes
1 cup mushroom, sliced
1 tsp. oyster sauce
1/4 cup low sodium soy sauce
1/8 cup vinegar
1/8 tsp. red chili pepper powder or cayenne or more to taste
1/2 tsp. garlic powder
1/8 ground black pepper
1 tbsp. Olive oil
1/8 med. sized onion, thinly sliced
or two bay leaves
Procedure:
1. Marinade chicken in a none reactive bowl with the mixture of soy sauce, vinegar, cayenne pepper, oyster sauce, garlic powder and ground black pepper for at least 30 mins.
2. Use a pot to cook the chicken slow and low heat so that chicken will absorb the flavor. Add the olive oil and mushroom when the sauce level has gotten low.
3. Place the chicken in a serving platter using a slotted spoon. Add the onion to the sauce in the pot and place it on top of the chicken. Serve hot with some greens and rice if you like. Enjoy your meal fellas!
