Cheesy Ensaymada Bread

Ensaymada is one of the favorite snack of Filipinos.  My husband loves this so every now and then I make some for us.

Recipe Yield: 16 pieces of breads

Ingredients:
Dough
1/2 cup fresh milk
1 1/4 tsp. instant yeast or 1 pack instant yeast
3 tbsp. sugar (I used 3 sachets of Stevia & 1 tbsp. white sugar)
3 cups sifted all-purpose flour or wheat flour plus extra flour for dusting
1 tsp. salt
3 tbsp. melted/softened
2 beaten eggs
1 tbsp. cooking oil
Filling
1 cup or more shredded cheddar cheese
1 tbsp. softened unsalted butter 
Topping
1-2 tbsp. melted butter
1/4 cup white sugar
1 cup or more shredded cheddar cheese

Procedure:
For the Dough 
1. Heat the fresh milk in the microwave for about 30 seconds. Add in the instant yeast and sugar, stir and set aside for 10 minutes until it starts to from bubbles.
2. Pour the all-purpose flour and salt in a stand mixer bowl and mix for 1 seconds. Add in the yeast mixutes and mix for 2 minutes. Pour in the beaten eggs and butter mix again for about 5 minutes or until the dough starts to form into a ball. Knead the dough in a dust of flour for about 2 minutes.
3. Transfer the dough in a bowl brushed with oil. Cover it with a dump clean cheese cloth or towel for 1 hour until the dough has doubled in size. After an hour punch the dough and knead for few seconds and form it into a ball. Divide the dough into four equal parts. Divide each part into another four parts to make it 16 equal pieces. 
To make the Filling
4. Take 1 piece of smaller dough. Using rolling pin to flatten it to form a rectangular shape flat dough. Put about 2 tbsp. shredded cheddar cheese in the middle of the flattened dough. Pour some melted butter around the edges of the dough. Roll it and seal by pinching the edge of the dough. Roll using your hand then make a knot shape dough. Repeat the procedure until all the dough are done.
5. Preheat the oven to 375 degrees Fahrenheit. Spray a cookie baking pan or coat the surface of the pan with butter. Place the ensaymada dough in the pan. Cover it with a dump clean cheese cloths for 10 minutes until the size doubled. After 10 minutes, take the cloths off of the pans and place it pan in the oven. Bake for 10 minutes or until slightly brown.
To add the Topping
6. Let the baked bread cool for about 5 minutes or until it is comfortable for you to hold it. Dip it in the melted butter, then to the sugar and top it with shredded cheese. Repeat until all are topped. 
7. Transfer it to a serving plate, serve and enjoy!
