Stir-fried Succotash with Bacon

Succotash is another ingredient I am not so familiar with so I looked for some recipe ideas and here's what I came up with.

Recipe Yield: Two small servings

Ingredients:
4 strips bacon, diced
1 Tbsp. butter
1 clove garlic, minced
1 can whole kernel succotash, drained
1/4 of a piece of red bell pepper, sliced
2 Tbsp. milk or heavy cream
Salt and pepper to taste

1. Place the diced bacon in a non-stick skillet and fry it in its own fat until crispy. Drain it's fat when done.
2. Melt the butter in the same pan. Sauté garlic and add in the succotash and bell pepper then stir. Add in the hot sauce and milk or heavy cream and season it with salt and pepper.
3. Place it in a serving platter, serve and enjoy!

This is Lannie Armstrong's recipe inspired from some recipes at foodnetwork.com. Feel free to share and use it for your home cooking.
