Scrambled Egg w/ Spinach & Ham


I was inspired by an IG friend, @rebekkaceleste's omelette with chicken and spinach so I made my version too.

Recipe yield: Servings for two 

Ingredients:
2 raw eggs, slightly beaten
1/8 of a piece of med. sized onion, minced small
A handful or more spinach leaves, washed and pat dry
2 slices of ham, torn into small pieces
Olive oil
Ground black pepper to taste (and salt, if you wish)

Procedure:
1. Add the torn ham slices to the slightly beaten egg and whisk. Season it with ground black pepper and/or salt if you wish to make it saltier.
2. Heat a skillet and pour about a 
tsp. Olive oil and sauté onion. Add in the spinach and stir until wilted. 
3. Turn the heat off and add in the scrambled egg with ham. Cover the skillet with a lid for about 2 mins. or until the liquid turns slightly solid. Pour some more olive oil or cooking oil around the edges of the egg and put the lid back. When ready, flip the egg to cook the other side. You can turn the stove on for a bit to cook completely.
4. Place it in a serving platter. Add some hotdog or sausage to the side. Serve and enjoy!
