Sauerkraut Casserole


Sauerkraut Casserole

Again, this is another recipe I am not too familiar with but I welcome ideas and here's what I came up with. If you have some left over pork chop. This will be a good way to use it.

Recipe Yield: Servings for two

Ingredients:
14.4 oz. can of shredded sauerkraut, drained
6 slices of smoked bacon, sliced and cooked until crispy in its own fat. (Fat discarded)
1/4 cup carrots, sliced like match sticks
1/4 of a med. sized onion, minced small
1 cup chicken stock or boiled bones of pork
1/2 lb. pork chop or pork loin, halved and bones removed
Salt and ground pepper to taste

Procedure:
1. Preheat oven to 325 degrees Fahrenheit.
2. Mix all the above ingredients in a bowl except for the pork.
Place the pork at the middle of the dish then pour the mixture on top.
3. Take it out of the oven after baking for 30 minutes and place the pork on top of the mixture to brown the meat. Put it back in the oven and bake some more for 15 to 20 minutes more until the pork is well done.
4. Let it cool down for about 2 mins. Serve and enjoy!
