Avocado and Tomato Salad


          My husband and I are both not used to the taste of the avocado when I used it for salad. It feels weird when we were eating it. Especially for Filipinos who grew up having avocado shake this may not be a good recipe for you. But if you enjoy eating it with tacos and subs, or even guacamole, you might like this one. The health benefits is great too so you guys can try this recipe.

Recipe Yield: Servings for Four

Ingredients:
1 piece ripe avocado, diced medium
1 cup grape tomatoes, (or cherry tomatoes) halved
1/2 med. sized cucumber, diced medium
1/2 cup white onion, diced small
1 tsp. dried parsley or 2 tbsp. fresh cilantro, chopped
1 tsp. lemon juice
1/4 cup olive oil
1 tbsp. Mrs. Dash, original blend seasoning
Fresh crushed black pepper
Pinch if salt

Procedure:
1. In a large bowl, combine the avocado, tomatoes, cucumber onion and lettuce. If you are using fresh cilantro, add it to this mixture. Toss.
2. Using a separate cup combine Mrs. Dash seasoning, salt and pepper, dried parsley, lemon juice and olive oil. Mix and the pour it in the mixture if salad. Toss or mix again.
2. Serve and enjoy.

Note: You can use Ken's Olive oil and vinegar salad dressing or your other favorite dressing.
