Recipe Yields: Servings for two
Ingredients:
1/4 cup (approx.) ground turkey
1 tsp. Olive oil
1 clove garlic, crashed and minced
1/2 shallot or 1/4 med. sized white onion, sliced thinly
1 med. sized tomato, cubed
1/2 med. sized Bitter melon/gourd, sliced thinly
1 pc. egg, slightly beaten
salt and pepper to taste
Procedure:
1. In a pan, pour in Olive oil and saute ground turkey, garlic, onion and tomatoes. Simmer to 1 to 2 minutes then crash diced tomatoes to make the sauce thicker and richer in flavor.
2. Add in the bitter melon and the egg. Add salt (1 tbsp. of soy sauce will do too) and pepper to taste. Cover with the lid until the bitter melon is half cooked or fully cooked if you wish.
3. Stir one more and it will be ready to serve and enjoy.
* Note: The key to bitter melon/gourd to avoid making it too bitter, still it just once or twice only.
