Stir-fried Vermicelli Noodles or Pansit for Filipinos


Recipe Yield: Servings for two

Ingredients:
1/2 lb. Vermicelli noodles, soaked in water for 5 to 8 mins.
1/4 lb. chicken, sliced thinly
1 cup chicken broth or boiled bones of Chicken and shells of shrimp
1 Tbsp. Olive oil
1/4 cup carrots, thinly sliced
1/4 cup green beans, sliced diagonally and thinly
1/2 cup green cabbage, sliced
1/4 cup soy sauce
1 tsp. ground black pepper, or to taste
1 clove garlic, crashed and finely minced
1/4 med. sized onion, thinly sliced
1/4 tsp. paprika or yellow food color
5 pieces. shrimp or more, peeled and deveined
2 pieces. popstickers, sliced

Procedure:
1. Heat a skillet and pour Olive oil. Pan-fry the slices of popstickers and shrimps and set aside.
2. Sauté the chicken until the color turns whitish. Add the garlic and onion and stir. Pour in the soy sauce, chicken broth, ground black pepper and paprika. Cover and bring to a boil.
3. Add in the soaked vermicelli noodles, carrots, green beans and cabbage. Stir until the sauce were absorbed by the noodles.
4. Place the noodles to a serving platter and top it with the popstickers and shrimps. Serve hot and enjoy!
