Chopsuey (Chop Suey)


Chop Suey is a favorite Filipino vegetable dish believed to be of Chinese origin.

Recipe Yield: Servings for two

Ingredients:
10 pieces Shrimps, peeled and deveined
1/4 lb. boneless skinless chicken breast, cubed
1 tsp. Olive oil
1/2 tsp. oyster sauce
1/2 tsp. sesame oil
1 clove garlic, crashed and minced
1 piece shallot or 1/4 med. sized white onion, sliced
1/8 of a piece of cabbage, sliced
1/2 cup bell peppers, can use different colors, diced
1 cup cauliflower florets
1/4 cup snow peas, ends trimmed
1/4 cup carrots
1/4 cup milk
1/4 cup shrimp broth (boiled water with shrimp shells) cooled
1 1/2 tsp. cornstarch
Salt and pepper to taste
Pork or chicken liver, cubed or sliced (Optional)

Procedure:
1. In a small bowl, marinade the chicken in oyster sauce and Sesame oil for about 30 mins. or while cutting up vegetables.
2. Heat a pan big enough for the amount of vegetables you are cooking. Pour Olive oil and pan-fry the shrimps until they are not transparent anymore and the color turned light orange then set aside.
3. Pan-fry the chicken until the color turned whitish to light brown. You can also add the chopped liver if you prefer to have some in this dish.
4. Add the garlic and onion and stir. Add in the cauliflower and stir. Pour the milk and simmer for 2 mins. Add in the carrots, bell peppers and snow peas. Stir and season with salt and pepper.
5. Pour half the amount of shrimp broth to the pan and dilute the cornstarch to the remaining broth. Pour it to the pan an stir until the sauce thickens. Add the cabbage, stir and give a final taste.
6. Transfer the cooked Chop Suey to a serving bowl. Top it with the pan-fried shrimp. Serve with smile and enjoy!
